01 - 4 cups seedless watermelon, cut into 1-inch cubes
02 - 3/4 cup crumbled feta cheese
03 - 1/3 cup fresh mint leaves, roughly torn

06 - 1 tablespoon fresh lime or lemon juice
07 - Freshly ground black pepper, to taste

# Steps to Follow:

01 - In a large bowl, gently combine the watermelon, feta, mint, and red onion (if using).
02 - Drizzle with olive oil and lime or lemon juice.
03 - Toss lightly to mix, being careful not to break up the feta.
04 - Season with freshly ground black pepper to taste.
05 - Serve immediately, or chill for 10–15 minutes before serving.
