01 - Arrange bacon slices in a skillet over medium heat and cook until crispy. Transfer to paper towels to drain any excess fat.
02 - Combine ricotta cheese with chopped chives and freshly ground black pepper in a small mixing bowl until evenly blended.
03 - Place bread slices on a clean surface. Spread butter evenly on one side of each slice.
04 - On the unbuttered side of two bread slices, spread half the ricotta mixture each. Top with shredded mozzarella and two bacon slices per sandwich. Cap with remaining bread slices, buttered side facing out.
05 - Heat a nonstick skillet over medium heat. Grill each sandwich for 3 to 4 minutes per side, until bread is golden brown and cheese is melted.
06 - Cut sandwiches in half and serve immediately while warm.
