01 -  Preheat oven to 350°F (180°C). Lightly grease an 8-inch square baking dish or equivalent. 
 02 -  In a large mixing bowl, combine sliced apples with lemon juice, brown sugar, ground cinnamon, ground nutmeg, and a pinch of salt. Transfer and distribute evenly in the prepared baking dish. 
 03 -  In a separate bowl, blend ricotta cheese, honey, vanilla extract, and lemon zest until smooth. Spoon dollops over apple layer and gently spread to cover most of the fruit. 
 04 -  In another bowl, combine granola, melted butter, and maple syrup. Mix thoroughly to coat. Scatter the mixture evenly across the ricotta layer. 
 05 -  Bake for 30 to 35 minutes, until granola achieves a golden color and apples soften. Remove from oven. 
 06 -  Allow to cool for a minimum of 10 minutes before serving. Present warm or at room temperature.
