Combine red velvet cake mix, eggs, vegetable oil, and vanilla extract in a large mixing bowl. Blend until a thick, uniform dough forms.

Scoop tablespoon-sized amounts of dough and arrange them 2 inches apart on prepared baking sheets.

Bake for 9 to 11 minutes, or until edges are set but centers remain soft. Do not overbake.

Allow cookies to cool on the baking sheet for 5 minutes. Transfer to a wire rack and let cool completely.

Whisk together powdered sugar, milk, and vanilla extract until icing is smooth and spreadable. Adjust with additional milk as needed for consistency.

Once cookies are cool, spoon or pipe a small circle of icing onto each cookie center. Immediately place a candy eyeball into the icing.

For a bloodshot appearance, drizzle red gel food coloring around each eyeball. Use blue and black gel icing for additional iris and pupil detail if desired.
