# The Ingredients You'll Need:

01 - 1 box (15.25 oz) red velvet cake mix
02 - 2 large eggs
03 - 1/3 cup vegetable oil
04 - 1 teaspoon vanilla extract

→ Topping & Decoration

05 - 1 cup powdered sugar
06 - 2 tablespoons milk
07 - 1/2 teaspoon vanilla extract
08 - 24 candy eyeballs or chocolate candies with an eye design
09 - Red gel food coloring, optional, for blood effect
10 - Blue gel icing, optional, for iris decoration
11 - Black gel icing, optional, for pupil decoration

# Step-by-Step Instructions:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - Combine red velvet cake mix, eggs, vegetable oil, and vanilla extract in a large mixing bowl. Blend until a thick, uniform dough forms.
03 - Scoop tablespoon-sized amounts of dough and arrange them 2 inches apart on prepared baking sheets.
04 - Bake for 9 to 11 minutes, or until edges are set but centers remain soft. Do not overbake.
05 - Allow cookies to cool on the baking sheet for 5 minutes. Transfer to a wire rack and let cool completely.
06 - Whisk together powdered sugar, milk, and vanilla extract until icing is smooth and spreadable. Adjust with additional milk as needed for consistency.
07 - Once cookies are cool, spoon or pipe a small circle of icing onto each cookie center. Immediately place a candy eyeball into the icing.
08 - For a bloodshot appearance, drizzle red gel food coloring around each eyeball. Use blue and black gel icing for additional iris and pupil detail if desired.
09 - Allow icing and decorations to fully set prior to serving or storage.

# Additional Tips::

01 -
  • Easy shortcut using cake mix makes baking fast and foolproof
  • Ready in about half an hour from start to finish
  • Customizable decorations allow you to match your party theme
  • Minimal cleanup thanks to one-bowl mixing
  • Soft chewy texture even after storing overnight
02 -
  • This recipe works equally well with gluten-free cake mix
  • Making your own candy eyeballs is fun for kids and lets you control ingredients
  • These cookies are best the day they are made but stay soft for days if stored properly
  • Out of all the candies you can use for the eyes I love using chocolate buttons because they melt just slightly onto the icing making each bite more decadent
03 -
  • Do not skip cooling completely before icing to avoid melting decorations
  • Use a small offset spatula or the back of a spoon to swirl icing smoothly
  • Keep red gel in a plastic squeeze bottle for the neatest bloodshot veins
