In a blender, combine pineapple chunks, coconut milk, maple syrup (or honey), vanilla extract, and salt. Blend until completely smooth.

Taste and adjust sweetness as needed.

If desired, stir in shredded coconut for added texture.

Pour the mixture evenly into popsicle molds, leaving a little space for expansion.

Insert sticks and freeze for at least 4 hours, or until solid.

To unmold, briefly run warm water over the outside of the molds and gently release the popsicles.
