Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

Brush the cut sides of the peaches with melted butter, then drizzle or brush with honey. Sprinkle with cinnamon if using.

Place peaches cut-side down on the grill. Grill for 3–4 minutes, until grill marks appear and peaches begin to caramelize.

Flip peaches and grill skin-side down for another 3–4 minutes, until soft but not mushy.

Remove peaches from the grill. Place two halves on each serving plate.

Top each portion with a scoop of vanilla ice cream. Drizzle with additional honey and garnish with mint leaves if desired. Serve immediately.
