In a medium bowl, mix Greek yogurt, honey (or maple syrup), and vanilla extract until well combined and smooth.

Spread the yogurt mixture evenly over the prepared baking sheet to about 1/4-inch thickness.

Scatter the berries evenly over the yogurt. Sprinkle with chopped nuts, coconut, and lemon zest if using.

Gently press toppings into the yogurt with clean hands or a spatula to help them adhere.

Freeze, uncovered, for at least 2 hours or until completely firm.
