→ Chili Oil

15 - 4 tablespoons chili oil
16 - 1 tablespoon soy sauce
17 - 1 teaspoon black vinegar or rice vinegar
18 - 1 teaspoon toasted sesame seeds
19 - 1 teaspoon finely chopped spring onion

# Step-by-Step Instructions:

01 - Combine ground pork, spring onions, garlic, ginger, soy sauce, sesame oil, Shaoxing wine, sugar, white pepper, napa cabbage, and cornstarch in a mixing bowl. Mix thoroughly until well combined and slightly sticky.
02 - Place a dumpling wrapper in your palm. Spoon approximately 1 teaspoon of filling into the center of each wrapper.
03 - Dip your finger in water and moisten the edge of each wrapper. Fold in half and pinch edges firmly to seal, creating pleats if desired.
04 - Repeat filling and sealing with remaining wrappers and filling. Cover completed dumplings with a damp cloth to prevent drying out.
05 - Set air fryer to 375°F and preheat for 3 minutes.
06 - Lightly spray or brush all dumplings with cooking oil. Arrange in a single layer in the air fryer basket without overlapping.
07 - Air fry for 8 to 10 minutes, turning halfway through cooking, until golden and crispy on all sides.
08 - While dumplings cook, combine chili oil, soy sauce, black vinegar, toasted sesame seeds, and spring onion in a small bowl. Stir to blend.
09 - Transfer hot dumplings to a serving platter and serve immediately with chili oil dipping sauce on the side.

02 -
  • Don't overfill the dumplings—about 1 teaspoon of filling is perfect for standard-sized wrappers.
  • Work with a few wrappers at a time, keeping the rest covered to prevent them from drying out.
  • For extra crispy bottoms, give the dumplings a light spritz of oil halfway through cooking.
  • These dumplings can be frozen before cooking. Freeze them on a tray first, then transfer to a freezer bag once solid.
  • The chili oil sauce keeps well in the refrigerator for up to one week and makes a great dipping sauce for other dishes.
