Line a 9x13-inch baking pan with parchment paper and lightly grease the surface.

In a large saucepan over low heat, melt the vegan butter. Add the vegan marshmallows and stir continuously until fully melted and smooth.

Remove the pan from heat. Stir in the vanilla extract and green food coloring until the desired shade is achieved.

Quickly fold in the crispy rice cereal until every piece is evenly coated in the marshmallow mixture.

Transfer the mixture to the prepared pan. Press it evenly using a greased spatula or another sheet of parchment. Allow to cool for 10 to 15 minutes.

Once set, lift the mixture from the pan and cut into 12 rectangles using a sharp knife.

Melt dark chocolate chips with coconut oil (if using) in a microwave or double boiler, stirring until smooth.

Dip the top of each bar into the melted chocolate to create Frankenstein's hair. Place bars on a parchment-lined tray.

While the chocolate is still wet, press two candy eyes beneath the chocolate hair on each bar.

Use black decorating gel or melted chocolate to pipe a mouth and stitches onto each face.

Insert a pretzel stick into each side of the bar to create neck bolts, if desired.

Allow the chocolate decorations to fully set before serving the bars.
