# Step-by-Step Instructions:

01 - Cut the drained tofu into 1/2-inch cubes. Toss evenly with cornstarch until uniformly coated.
02 - Heat vegetable oil in a large nonstick skillet over medium-high. Add tofu cubes and cook, turning occasionally, until golden and crisp on all sides, approximately 8 to 10 minutes.
03 - During the final minute of cooking, add soy sauce and lime juice to the skillet. Toss gently to coat, then remove tofu from heat.
04 - In a mixing bowl, whisk together peanut butter, soy sauce, maple syrup or honey, rice vinegar, toasted sesame oil, grated ginger, minced garlic, and sriracha if using. Gradually add warm water as needed until the sauce is smooth and pourable.
05 - Place washed lettuce leaves on a serving platter. Fill each leaf with sautéed tofu, julienned carrot, cucumber, bell pepper, and spring onions.
