01 - Spread butter evenly on one side of each bread slice.
02 - Place half of the shredded cheddar cheese and half of the chopped kimchi between two slices of bread, keeping the buttered sides facing outward. Repeat for the second sandwich.
03 - Heat a skillet over medium heat. Place the assembled sandwiches in the pan and cook until the bread is golden brown and the cheese is completely melted, about 4-5 minutes per side.
04 - Remove sandwiches from the skillet. Sprinkle gochugaru over the top before serving. Slice in half if desired.
