01 - Combine almonds and walnuts in a food processor and pulse until coarsely ground.
02 - Introduce dates, cranberries, and apricots. Pulse until the mixture is finely chopped and sticky.
03 - Add chia seeds, ground cinnamon, ground ginger, ground nutmeg, ground cloves, vanilla extract, salt, maple syrup or honey, and shredded coconut. Process until the mixture clumps together and holds its shape when pressed.
04 - Scoop out tablespoon-sized portions and shape into balls using your hands.
05 - Roll each ball in additional shredded coconut if desired for a festive finish.
06 - Refrigerate the balls for at least 30 minutes to firm up. Store in an airtight container for up to one week.
