01 - Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
02 - In a large mixing bowl, combine rolled oats, vanilla protein powder, ground cinnamon, ground ginger, ground nutmeg, baking powder, and salt.
03 - In a separate bowl, whisk together eggs, maple syrup or honey, melted coconut oil, and vanilla extract until fully blended.
04 - Add the wet mixture to the dry ingredients and stir gently until well incorporated.
05 - Fold in grated carrot, chopped walnuts or pecans, and raisins if using.
06 - Spread batter into the lined pan, smoothing the surface evenly. Bake for 22–25 minutes or until golden on top and a toothpick inserted in the center emerges clean.
07 - Allow bars to cool fully in the pan before slicing into individual bars.
