01 -  In a medium mixing bowl, blend together grated cheddar cheese, cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth and fully combined. 
 02 -  Spread a generous layer of pimento cheese mixture onto two slices of bread. Cover with remaining bread slices to create sandwiches. 
 03 -  Evenly coat the exteriors of each sandwich with the softened unsalted butter. 
 04 -  Preheat a nonstick skillet or griddle over medium-low heat. Place the sandwiches onto the hot surface. Cook for 3 to 4 minutes per side, pressing gently until the bread turns golden and the cheese is melted. 
 05 -  Remove sandwiches from the skillet. Slice in half and serve immediately while warm.
