Lime Shrimp Fajitas (Printable Version)

# What You Need:

→ Shrimp Marinade

01 - 1 lb (450 g) large shrimp, peeled and deveined
02 - 2 tbsp olive oil
03 - Juice and zest of 1 lime
04 - 2 garlic cloves, minced
05 - 1 tsp ground cumin
06 - 1 tsp chili powder
07 - ½ tsp smoked paprika
08 - Salt and black pepper, to taste

→ Vegetables

09 - 1 red bell pepper, thinly sliced
10 - 1 yellow bell pepper, thinly sliced
11 - 1 small red onion, thinly sliced
12 - 1 tbsp olive oil
13 - Salt and black pepper, to taste

→ For Serving

14 - 8 small corn or flour tortillas
15 - Fresh cilantro, chopped
16 - Lime wedges
17 - Sour cream, salsa, or guacamole (optional)

# Steps to Follow:

01 - In a bowl, combine shrimp with olive oil, lime juice and zest, garlic, cumin, chili powder, paprika, salt, and pepper. Toss well and marinate for 15 minutes.
02 - Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add sliced peppers and onion; sauté for 4–5 minutes until just tender. Remove and set aside.
03 - In the same skillet, add shrimp and cook 2–3 minutes per side until pink and cooked through.
04 - Return cooked vegetables to the skillet and toss with shrimp to combine. Warm through for 1 minute.
05 - Warm tortillas in a dry skillet or microwave, then fill with shrimp and veggie mixture. Garnish with fresh cilantro and serve with lime wedges and optional toppings.

# Additional Notes:

01 - For extra flavor, grill the shrimp on skewers instead of pan-cooking.
02 - Add sliced jalapeños or hot sauce for heat.
03 - Great with a side of black beans or Spanish rice.
