01 - In a large mixing bowl, stir together instant mashed potato flakes, hot water, and whole milk until the mixture is smooth. Allow to sit for 2 minutes to thicken.
02 - Add eggs, melted butter, shredded cheddar cheese, chopped chives, garlic powder, salt, and ground black pepper to the potato base. Mix thoroughly until the batter is even and has no lumps.
03 - Heat the waffle iron according to manufacturer's guidelines and lightly coat with nonstick spray or butter to ensure easy release.
04 - Deposit approximately 1/2 cup of batter at the center of the preheated waffle iron. Close the lid and cook for 4 to 5 minutes, until golden brown and crisp.
05 - Carefully transfer the cooked waffle to a plate and continue with remaining batter until all waffles are prepared.
06 - Serve waffles hot, garnished with sour cream and extra chopped chives according to your preference.
