Gochujang Mayo Chicken Sandwich (Printable Version)

A spicy chicken sandwich with creamy gochujang mayo, melted cheese, and crisp grilled bread.

# The Ingredients You'll Need:

→ Gochujang Mayo Chicken

01 - 1 large boneless, skinless chicken breast (7 oz)
02 - 2 tbsp gochujang (Korean chili paste)
03 - 3 tbsp mayonnaise
04 - 1 tsp soy sauce
05 - 1 tsp honey
06 - 1 tsp rice vinegar
07 - 1/2 tsp garlic powder
08 - 1/4 tsp black pepper
09 - 1 tbsp vegetable oil

→ Sandwich

10 - 4 slices sourdough or country bread
11 - 4 slices mozzarella or provolone cheese
12 - 2 slices sharp cheddar cheese
13 - 2 tbsp unsalted butter, softened
14 - 1/4 cup thinly sliced scallions
15 - 1/4 cup sliced cucumber (optional)

# Step-by-Step Instructions:

01 - Whisk together gochujang, mayonnaise, soy sauce, honey, rice vinegar, garlic powder, and black pepper in a small bowl until smooth.
02 - Slice the chicken breast into thin strips. Heat vegetable oil in a skillet over medium-high heat. Cook chicken for 5 to 6 minutes until golden brown and fully cooked.
03 - Remove skillet from heat and toss the cooked chicken with the spicy mayonnaise until evenly coated.
04 - Butter one side of each bread slice. On the unbuttered side, layer mozzarella or provolone cheese, half the coated chicken, scallions, optional cucumber slices, sharp cheddar cheese, then top with another bread slice buttered side out.
05 - Heat a clean skillet or grill pan over medium heat. Place sandwiches and press gently. Cook 3 to 4 minutes per side until bread is golden and cheese is melted. Flip carefully and repeat.
06 - Transfer sandwiches to a cutting board, allow to rest for 1 minute, then slice and serve immediately.

# Additional Tips::

01 -
  • The gochujang mayo is criminally addictive and transforms plain chicken into something you'll crave on random weeknights.
  • It feels fancy enough for guests but takes barely longer than ordering takeout.
  • You get all the comfort of grilled cheese with actual protein and a flavor profile that keeps surprising you.
02 -
  • Don't skip the honey in the mayo mixture—it's what keeps the spice from becoming aggressive and makes everything taste rounder.
  • The chicken needs to actually be cooked through before you sauce it, but don't overcook it to the point of dryness or no amount of mayo will save it.
  • Medium heat on the final pan is non-negotiable; too hot and the outside burns before cheese melts, too cool and you get rubbery bread instead of crispy.
03 -
  • If you want extra heat without adding more gochujang (which can get one-dimensional), layer in some sliced jalapeños or a pinch of cayenne into the mayo.
  • Cooking the sandwich at medium instead of medium-high is the difference between a sandwich that's perfect and one that's burnt on the outside and cold in the middle.
