Elote Pasta Salad Lime Cotija (Printable Version)

# What You Need:

→ Pasta

01 - 8 oz (225 g) elbow macaroni or fusilli

→ Vegetables

02 - 2 cups corn kernels (fresh, frozen, or canned)
03 - 1 red bell pepper, diced
04 - 1/2 red onion, finely chopped
05 - 1/4 cup fresh cilantro, chopped

→ Dressings & Cheese

06 - 1/4 cup mayonnaise
07 - 1/4 cup sour cream
08 - Juice of 2 limes
09 - 1 tsp chili powder
10 - 1/2 tsp garlic powder
11 - Salt and pepper to taste
12 - 1/2 cup cotija cheese, crumbled (plus more for garnish)

# Steps to Follow:

01 - Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
02 - In a large bowl, combine the cooled pasta, corn, red bell pepper, red onion, and cilantro.
03 - In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
04 - Pour the dressing over the pasta mixture and toss until well combined.
05 - Gently fold in the cotija cheese, reserving some for garnish. Chill in the refrigerator for at least 30 minutes before serving. Garnish with additional cotija cheese and cilantro if desired.
