# Step-by-Step Instructions:
01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the pressed tofu dry and cut into 3/4-inch cubes.
03 - In a bowl, toss tofu with cornstarch, salt, and vegetable oil until evenly coated.
04 - Arrange tofu cubes on the prepared baking sheet. Bake for 25 to 30 minutes, flipping halfway, until golden and crisp.
05 - Rinse rice and cook in water according to package instructions. Fluff with a fork once done.
06 - Combine mayonnaise, Sriracha, soy sauce, and lime juice in a small bowl; mix until smooth.
07 - Julienne the carrot, slice the cucumber and spring onions, slice the avocado (if using), and chop the herbs.
08 - When tofu has finished baking, toss hot tofu cubes with the chili-mayo sauce until well coated.
