Chicken Skewers with Grilled Corn (Printable Version)

# What You Need:

→ Chicken Skewers

01 - 1.5 lbs (700 g) boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
02 - 3 tbsp olive oil
03 - 2 tbsp lemon juice
04 - 2 garlic cloves, minced
05 - 1 tsp smoked paprika
06 - 1 tsp dried oregano
07 - Salt and pepper, to taste
08 - Wooden or metal skewers

→ Grilled Corn

09 - 4 ears of corn, husked
10 - 2 tbsp butter, melted
11 - Salt, to taste
12 - Optional: chili powder, grated Parmesan, lime wedges

# Steps to Follow:

01 - In a bowl, combine olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
02 - Preheat grill to medium-high heat. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
03 - Thread marinated chicken onto skewers.
04 - Place chicken skewers and corn directly on the grill. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has nice grill marks. Grill corn for 10–15 minutes, rotating every few minutes, until slightly charred and tender.
05 - Brush grilled corn with melted butter and season with salt and optional toppings like chili powder or Parmesan. Serve chicken skewers alongside grilled corn with lemon or lime wedges.
