# Step-by-Step Instructions:

01 - Preheat oven to 375°F and line a baking sheet with parchment paper or lightly grease a baking dish.
02 - Place halved and seeded peppers cut-side up on the prepared baking sheet.
03 - Heat olive oil in a large skillet over medium heat. Sauté red onion, celery, and garlic for 3 to 4 minutes until softened.
04 - Add ground turkey to the skillet. Cook, breaking apart meat, until browned and cooked through, about 5 to 6 minutes.
05 - Add diced tomatoes, Cajun seasoning, smoked paprika, cayenne pepper if desired, salt, and black pepper. Stir and cook for 2 minutes.
06 - Remove skillet from heat and stir in cooked brown rice with fresh parsley.
07 - Evenly spoon turkey mixture into pepper halves. If using, sprinkle shredded cheese on top.
