01 -  Preheat oven to 400°F (200°C). 
 02 -  Combine chicken thighs, olive oil, Cajun seasoning, smoked paprika, salt, and black pepper in a bowl. Toss thoroughly to coat. 
 03 -  Arrange seasoned chicken on a parchment-lined baking tray. Bake for 20 to 25 minutes, until fully cooked and juices run clear. 
 04 -  While chicken bakes, mix cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a bowl. Blend until evenly combined and refrigerate until needed. 
 05 -  When chicken is cooked, shred with two forks. Transfer to a bowl, add barbecue sauce and hot sauce if using. Toss thoroughly. 
 06 -  Optionally brush the insides of each bun with melted butter and broil for 2 to 3 minutes, until golden brown. 
 07 -  On the bottom half of each bun, place BBQ chicken. Top with slaw and sliced pickles. Set top bun in place. Garnish with cilantro or parsley as desired. 
 08 -  Serve immediately while warm.
