12 - 3/4 cup grated cheddar cheese

# Step-by-Step Instructions:

01 - Set the oven temperature to 400°F.
02 - Boil pasta in salted water until just al dente. Drain and reserve.
03 - Heat olive oil in a skillet over medium heat. Add sausage meat, breaking it up, and cook until browned, about 5 minutes.
04 - Add chopped onion to the skillet and cook for 3 to 4 minutes until softened, then stir in minced garlic and cook for an additional minute.
05 - Incorporate chopped tomatoes, tomato paste, dried herbs, chili flakes (if using), salt, and pepper. Simmer for 8 to 10 minutes until sauce thickens.
06 - Mix cooked pasta with the sausage sauce in a large bowl. Stir in half of the mozzarella and cheddar cheeses.
