01 -  In a large saucepan over medium heat, melt the butter. Add the onion and cook for 3 minutes until softened. Add garlic and cook for 1 minute until fragrant. 
 02 -  Stir in the orzo pasta and toast for 2 minutes, stirring frequently. 
 03 -  Pour in vegetable broth and whole milk. Bring mixture to a gentle simmer. 
 04 -  Mix in broccoli, salt, black pepper, and nutmeg if desired. Reduce heat to low, cover, and cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed. 
 05 -  Remove saucepan from heat. Fold in shredded cheddar cheese and stir until melted and creamy. Adjust seasoning if needed. 
 06 -  Serve hot, garnished with additional cheddar cheese or fresh herbs as desired.
