In a large bowl, whisk together flour, water, garlic powder, onion powder, paprika, salt, and black pepper to form a smooth batter.

Add the cauliflower florets to the batter and toss until well-coated.

Lightly spray the air fryer basket with oil. Arrange the battered florets in a single layer, working in batches if necessary.

Air fry for 12–15 minutes, shaking halfway through, until golden and crisp.

In a small bowl, mix hot sauce, melted butter, and honey (if using).

Transfer the cooked cauliflower to a clean bowl. Pour the buffalo sauce over and toss to coat evenly.

Return the coated florets to the air fryer for 3–5 minutes to set the sauce and crisp up.
